Extended aging in traditional onggi pottery develops remarkable complexity and elegance at higher strength. The patient fermentation process creates full-bodied richness with perfectly integrated alcohol that warms without overwhelming. Exceptional with formal Korean cuisine like gujeolpan or grilled beef, and surprisingly harmonious with creamy European cheeses.
